The Day We Cook!

 

Welcome to The day we cook!

During the busy touring season, I am hardly ever home, and the times I am home, I hardly cook as I typically enjoy dining out and exploring new restaurants. But times have changed, and since the beginning of the pandemic crisis when non-essential businesses were forced to close, and restaurants were mandated to serve take-out and delivery only, I turned to my kitchen. I have everything I need in it, and frankly took it for granted. Nowadays I cook more often than I dine out. Don’t get me wrong — I still LOVE exploring different restaurants and supporting small, local businesses (they need all of our support more now than ever) — but I actually have come to find solace in the kitchen. It’s a place where my mind can run wild in the culinary sense, and the experiments and possibilities are endless. There’s nothing like creating a home-cooked meal and simply enjoying the fruits of your labor — even better when you have someone to enjoy it with! I find the whole experience fun, meditative, and humbling.

Because who knows when the world will resume to some sort of normalcy, I’d like to invite you into my kitchen where I will cook a dish from a different country across the globe. The cooking session is hosted virtually, of course, and will take place on a bi-weekly basis.

HOW: All virtual sessions are about 1 hour long, and will be conducted via Google Duo. It’s a free app that is easy to download on your smartphone or ipad and is compatible on both Android and iOS operating systems. The video clarity is excellent, there is no time limit, nor a key and password to enter. I personally think it’s better than Zoom! All you have to do is download the free app. Once I find you on it, I will then send you a link to join the group video call on the day of class. Prior to class, I will send you a copy of the recipe.

The current schedule is listed below. For those that want to tune in, you can either cook with me while I guide you along, or you can simply watch, take notes, or sit back and relax with a bev of your choice while I chop, saute, and simmer. Along with the recipe, you will learn a brief history of each dish. So in essence, we all get to travel virtually to a different destination through the food I cook. A lot of us miss travel and hope to travel sometime this year. So in the meantime, why not do so through food, newfound friends, and some entertainment along the way?! You may just learn something new. Bon apetit!

 
 

Beef satay with peanut sauce

The first The Day We Cook session kicked off on January 13, 2021! We made Thai beef satay (grilled meat on skewers) with a savory peanut sauce. It’s one of the main street foods of Southeast Asia, and they’re prepared a little differently depending on where you travel. You can use any type of meat for this dish, but during my session, I used beef, a tender cut of steak for the best beef skewers.

Today’s class focused on Rocoto Relleno, a Peruvian stuffed chili pepper. We traveled virtually to the beautiful colonial city of Arequipa in Southern Peru, where this unique dish originates.

Today’s feature was paella, a saffron-rice dish from Valencia, Spain. We used shrimp in this beautiful, classic Spanish dish! However, you can use chicken, chorizo, seafood, a combination thereof, or any other protein of your preference. Learn the story behind the paella and how it has come to be by watching the video below!
